Vegan French Toast with Berries

There are at least three ways to make plant-based eggs. One is with milled flaxseed. The next is with milled chia seeds. The third is with Aquafaba. Here is a brief descriptions of how to make the plant-based eggs to coat your favorite bread.

Flaxseed

Mill the flaxseed or buy already ground. Use the one tablespoon of ground flaxseed per egg in a given recipe. The ratio is one of flaxseed to three of water. In a small bowl mix one tablespoon with three tablespoons of water, mix well, and let it rest for a few minutes - until coagulates. Then use as instructed in your recipe.

Aquafaba

Aquafaba is the water remaining after cooking garbanzo beans (chickpeas). It is also the liquid in the can. The important aspect of this liquid is that it will foam up when agitated with a fork or blender. It starts of very liquid, but it can have enough air introduced with a beater or blender to coat bread.

For all these methods, prepare the plant-based egg, then the bread is cooked on a skillet to toast and brown.

Chia Seed

Chia seed naturally forms a gel-like coating when exposed to water. Mill the chia or buy already ground. Use the one tablespoon of ground chia per egg in a given recipe. The ratio is one of chia to three of water. In a small bowl mix one tablespoon with three tablespoons of water, mix well, and let it rest for a few minutes - until coagulates. Then use as instructed in your recipe.

Trinidad Eggplant and Garlic (SOS)

My version of this dish is done on an air fryer, instead of a grill.  Preheat your air fryer to 350° F.  Wash and then trim the eggplant and cut into thick slices.  Coarsely shop three or four large garlic cloves. On the thick slices of eggplant, dig your finger-nail into the flesh to make a groove for the pieces of garlic. Push garlic bits into the eggplant.  Sprinkle ginger juice and then season with freshly ground coriander, celery salt (lightly sprinkled).  Then coat with olive oil spray (or water) with the air-frier-grid-pan set on a paper towel to keep the counter clean.  Put the air fryer on the grid-pan for 10 minutes.  Flip over and rub ginger juice on the back, then apply freshly ground coriander seeds and celery salt and coat with olive oil spray (or water).  Air fried for another 10 minutes.
